Tonight's Dinner: Homemade Chicken Fingers


Every time we eat out at a restaurant, the kid's menus
always offer chicken fingers with french fries. Those
chicken finger meals are frozen, processed, have no color,
and are filled with preservatives. I make chicken fingers
at home that consist of 4 ingredients.

I try to stay away from fried foods,
but frying them at home once in a while, in my
opinion, is realistically fine.I feel so much
better when my family can enjoy a meal that doesn't
consist of anything made in a laboratory. Tonight we had
chicken fingers, mash potatoes, and asparagus...

Chicken Fingers Ingredients:

Boneless chicken breast
Flour
Organic 2%milk
Extra Virgin Olive Oil
salt&pepper

1. Heat pan on medium heat with
extra virgin olive oil (don't deep fry,
use just enough to cover the bottom
of the pan)
2.Slice chicken breast into strips.
3. Soak in milk for a few minutes
4. Season with salt and pepper
5.Roll in flour and place in pan
6. Fry until golden brown and cooked
thoroughly.

Mashed Potato Ingredients:

Potatoes
1/2 TBS butter
Organic 2% milk
salt & pepper

1. Bring water to a boil
2. Place potatoes (cut into quarters)
in the boiling water.
3. Boil until tender
4. Drain and place in a mixing bowl
5. Add very little butter and milk
6. Mix with an electronic mixer, add
salt and pepper

Gravy Ingredients:

Extra Virgin Olive Oil
Organic 2% milk
Water
Salt & pepper

1. Using the same grease that was
used to fry the chicken, heat on
high approximately 2 TBS of the
chicken grease.
2. Add 1-2 TBS flour and let cook
while stirring all around.
3. Slowly add a 1/4 cup milk or less
and some water according to what
the preference is for consistency.
4. Add salt and pepper according to
taste.
